In our assessment of the Asamiya Saemidori Matcha, we closely examined both the texture and flavor of the tea. Our evaluation included analyzing whether it produces dryness, sweetness, minerality or acidity, as well as assessing the thickness or richness of its consistency, known as mouthfeel. Lastly, we scrutinized the vegetal flavor of the matcha, which is a distinctive characteristic shared by all types of matcha.

At Nio, we prioritize tea fields that are completely free of pesticides or chemicals during our selection process. When working with larger tea farmers, we require them to provide us with the JAS label, which they can acquire through soil sampling and testing.

While partnering with smaller tea farmers who haven't obtained certification yet, we accept the "pesticide-free" label and aim to provide opportunities for small farmers without making the screening process too rigorous. Our goal is to support exceptional tea production while maintaining our commitment to pesticide-free farming.

How to prepare the tea

To prepare the Asamiya Saemidori Matcha, follow these basic steps to get the best bowl of matcha tea. While you can get creative and simplify this process, its recommended you follow it closely in the beginning to practice the proper technique

    Passo 1

    Start by sifting 2 grams of matcha powder into a bowl to remove any clumps that may have formed due to exposure to humidity.

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Add about 1 tablespoon of water to the bowl and mix the matcha powder into a paste to ensure that it is evenly distributed. Next, pour in 100ml of water.

    Gently scrape the sides and bottom of the bowl to combine the matcha with the water.

    Finally, whisk the matcha up using your wrist in rapid zigzag motions until a light green foam appears on top.

Questo tè è stato prodotto da Takatomo Katagi. Questo coltivatore ha rilevato l'attività dal padre, il quale è stato uno dei pionieri dell'agricoltura biologica in Giappone, coltivando il tè senza pesticidi e fertilizzanti chimici già negli anni '70. Questo tè ci arriva dalla fattoria di Katagi Kouka En, un'azienda familiare che coltiva tè a Shiga da sette generazioni.
